The
knife keeps a constant heat and is designed for continuous uncapping.
The blade has a copper tube soldered to the back and is connected
to a steam source with a plastic or rubber tube.
A small
boiler combined with a condenser can provide a steam source. The
boiler should have a safety pressure valve fitted. The boiler
is filled three-quarters with water and brought to the boil over
an even heat. The steam passes from the boiler through a plastic
tube fitted to one side of the uncapping knife. Heating the knife
on its way through, the steam passes out through a second tube
and into the condenser can. In the can the steam condenses back
into hot water which can be used to refill the boiler.
A kitchen
pressure cooker can be adapted easily as a boiler.
